Rosehip & Pine Avocado Toast

Who said avocado toast is overrated? 

Nothing is overrated when your food is your medicine.This is organic whole grain toast topped with avocado and is beaming with nutrients! I was feeling a bit under the weather today so I began my day with an anti inflammatory meal. Avocados contain heart healthy fats called monounsaturated fat. I average half an avocado a day. They are high in magnesium, potassium, and vitamin B-6. Avocados also provide omega-3 and betacarotene.
So, what else is on this toast? You've heard of rosehip right? rosehip is used in many teas and beauty products. It is high in vitamin C and works as an anti-inflammatory and is high in antioxidants. In traditional herbal and ayurvedic medicine, rosehip replaces steroids like prednisone, and often NSAIDS. Please consult your health care provider before consuming orally rosehip as there are contraindications that should not go ignored.
Gingerly, I added a bit of ginger. Ginger is also extremely high in anti- inflammatory properties as well. It also ads a little kick of spice to your foods. Ginger is a popular ingredient in teas, spices and cosmetics. Ginger is gentle on the digestive tract and is known to calm nausea and indigestion.
Pine nuts are almost a forgotten food! But yes, we can eat them so long as we aren't allergic! The benefits of pine nuts are magical! They strengthen bones, high in antioxidants, boosts the immune system, reduces cravings, assists in weight loss and improves the condition & lipid barrier of the skin!
Pumpkin seed's remind everyone of October. But we should be eating these year round. This superfood cleanses the gut, helping to rid the body of any suspected parasites. It is high in magnese and magnesium, high in antioxidants and is known to lower the blood sugar. I encourage you to research the foods you eat and pay attention to the way they make you feel. I've got you on the recipe for this kickass energy boosting, anti-aging, immuno supportive treat.

Recipe

  • One slice or two of Ezekiel live grain toast
  • 1/2 an avocado
  • 1/2 tsp of onion powder
  • 1/4 tsp of rosehip powder
  • 1/4 tsp of ginger powder
  • 1/4 tsp of oregano
  • 1/4 tsp of basil
  • olive oil
  • Pine nuts
  • Pumpkin Seeds 

Instructions

  • Lightly drizzle your bread with olive oil and toast. 
  • Cut and prepare your avocado by adding the onion, oregano, and basil. use a fork to mix well. 
  • Carefully remove toast from toaster oven and spread your avocado topping.
  • Sprinkle the rosehip powder and ginger on top of the spread.
  • Toss on your pine nuts and pumpkin seed. 
If you want to be more relaxed about this recipe, by all means be my guest! You can just mix everything into the avocado and spread it on the toast. Toast can always be toasted before adding olive oil drizzle as well. I just like to be fancy.
